To disable the Vital Stats numbers that display on your main menu, you need to utilize user logins.
From the Misc/Setup pull-down menu at the top, choose Employees. Here, on the upper right, there is a User tab. Each employee can be assigned a username/password for login, and so also here on this User tab, there is a list of screens/options that you can make available to them.
IMPORTANT: The All Forms option gives the user access to everything. So if you want to limit the access for a user, you need to not include that option. Pick only the options you want them to have access to from the list.
So, if you don't want someone to have access to the vital stats, make sure you don't have All Forms in their accessible screens list, and make sure you don't have the Main Menu Vital Stats there either.
